Here we go, just spent ages trying to find this.
I did a course on psychotropic plants a while back, here is the section about flying witches, quite an interesting read
Do witches take flight on broomsticks, or with an ingenious blend of psychotropic plants?
Prior to the Christian movement in Europe, the idea of flying was very much a part of the mythology. Freyja, the Norse goddess would transform into a falcon to fly, whilst the Goddess Holda would turn into a goose, which is the origins of “Old Mother Goose”.
The Valkyries were winged women who would fly to the scene of a battle to collect the souls of those who had perished. The winged Goddess Morrigan would do the same, taking to the skies by morphing into a crow. Artemis, you will remember, Goddess of the hunt would fly at night to greet the souls of those who had died too soon. And then we have the Slavic Baba Yaga who would fly through the air on a broom.
In 800 BC, in Homer’s “The Iliad”, a Goddess flies to Olympus courtesy of a special oil. In 200 BC flying ointments are mentioned in a book called The Argonautica.
In 160 AD, Roman records mention Pamphile the witch transforming into an owl after applying an ointment all over her body.
During the awful witch trials of the Middle Ages, there was much talk of flying ointments. Much of the “talk”, of course, sadly coming from poor souls being tortured, or from those who felt that their testimony would save themselves or a loved one. Hence, we see reports of people watching a witch anoint herself with a flying ointment and transforming into a bird.
Now, we know this probably wasn’t happening, and that any flight was purely in the mind, and this was indeed debated by the holy men of the day as they tried to decide whether witches physically flew to their meetings (their “Sabbath rites”), or whether they simply travelled in their minds.
There is a hypothesis that the witch and her association with the broom are strongly linked to the use of flying ointments. The ointment is most rapidly absorbed through the mucous membranes, and in women, an obvious route of administration is vaginal. Rumours started (fuelled by those being interrogated about witchcraft, please remember) that witches would slather their broom with ointment and then sit upon it to absorb the active ingredients vaginally. We also have plenty of testimony peppered throughout history and particularly the Middle Ages, of women and “witches” anointing their whole bodies with ointment, so it’s very possible that both methods were used.
Use of these ointments is also associated with sexual antics. Naturally from those seeking to save their own skin or to stir up bad feeling toward these women we heard stories of witches frolicking with demons. Again, this is unlikely, but the alkaloids in the plants used in the ointment may certainly have aroused individuals, which is no doubt where such rumours started.

Obviously they couldn’t have people selling cures that would compete with “science” along came burn the witch.
Years down the line and witches are a thing of fairy tales and children’s stories.
